I heard...Hi there, I'm a big fan of your books. I heard you will be picking a yummy recipe to prepare during your Thanksgiving feast. I would like to share my mom's scrumptious sweet potato pie. My mom's special sweet potato pie is prepared on every Thanksgiving at my house. Enjoy!!<br /><br /> Prep time: 30 minutes (ready in about two hours)<br /> Yield: eight servings<br /><br /> Crust: one refrigerated pie crust <br /> Filling: one and a half cups of mashed canned sweet potatoes, two third cup of firmly packed brown sugar, one cup half-and-half, one teaspoon of cinnamon, one half teaspoon allspice, one tablespoon of dry sherry or lemon juice, two eggs (beaten)<br /><br /> Topping: one cup of whipping cream, two tablespoons of sugar, one teaspoon of vanilla, and pecan halves.<br /><br /> 1. Prepare pie crust for one-crust filled pie using 9-inch pie pan.<br /><br /> 2. Heat oven to 425 degrees F. In a blender container or food processor bowl with a metal blade, combine all filling ingredients; blend well. Pour into crust-filled pan. <br /><br /> 3. Bake at 425 degrees F. for 15 minutes. Reduce oven temperature to 350 degrees F.; bake an additional 30 to 40 minutes or until center is set. Cool for 45 minutes or until completely cooled. <br /><br />4. In a small bowl, combine whipping cream, sugar and vanilla; beat until soft peaks form. Garnish pie with whipped cream and pecan halves.
